3 Best Blueberry Bakes

Blueberries add a deliciously sweetness and fruity taste to just about any type of baking recipe. Packed with the natural goodness Allah has given them, their rich flavor combines well with many other ingredients. Tarts, cakes, muffins and even cheese cakes can be enjoyed with a blueberry flavor. Here are three easy to make favorite bakes with blueberries:
Best Blueberry Pie Recipe
This pie has a delicious shortcrust pastry that melts in your mouth. The pastry contains minimal sugar and the sweetness of the pie comes from the blueberries. To make the pastry you will need: 375ml ground organic wheat flour, 1 tablespoon Azeez whole cane sugar, 125g cold butter cut into small cubes, 1 teaspoon Apple vinegar, and 3-4 tablespoons iced water.
Blueberry Pie Crust
Cut the butter into the flour and sugar mixture until it is soft and crumbly. Sprinkle over the vinegar and add the iced water one spoon at a time kneading to form soft dough. Wrap in greaseproof paper and place in the refrigerator for an hour to firm.
Take a 20cm pie dish and grease with organic butter, then dust lightly with flour. Preheat the oven to 200 degrees centigrade. Take the pastry out of the refrigerator and roll out on a pastry board to 5mm thick. Place the pie dish upside down on the pastry and cut around the dish leaving a 6cm border. Turn the pie dish the right way up and gently lift and place the cut pastry into the dish. The pastry should fold over the outer edge.
Blueberry Pie filling
Sprinkle a little cinnamon on the inside of the pastry, then add 4 cups of fresh or frozen blueberries. Spread the blueberries evenly in the pie dish. Take the extra pastry and roll it out again, cutting 2cm wide strips. Place the strips across the top of the pie in a crisscross pattern. Next fold the pastry inwards so that it holds in the blueberries. Press down the edges slightly to bind the pastry crust with the strips.
Place in a preheated oven and bake for 20-30 minutes until golden brown. Remove from oven and set aside to cool. Note do not serve immediately as the blueberries retain heat and may burn your mouth. Serve once cooled with freshly whipped cream or ice cream.
Easy Baked blueberry cheesecake
The richness of the blueberries offset the creamy lemon flavor of the cheesecake. It is a simple recipe that takes just 2 hours to prepare including cooling time, and is a totally favorite for the whole family. Please note that although this recipe is very tasty it is not particularly healthy. We recommend you to use organic products, and substitute the castor sugar by grinding Azeez whole cane sugar until it is a very fine powder. Also eat in moderation.
You will need: 125 g crushed digestive biscuits and 40g melted butter for the crust. Mix the biscuit crumbs and melted butter together and press into a greased 18cm springform pan. Place in the refrigerator to set.
While that is cooling, you can make the cheesecake filling: In a bowl mix together 225g cream cheese, 125ml sour cream, 50g castor sugar or additionally grounded Azeez sugar, 2 egg yolks, 20g cake flour, and the juice and finely grated rind of a lemon, until smooth. In a separate bowl, whisk the egg whites until they peak. Gently fold the egg whites into the cream cheese mixture.
Preheat the oven to 170 degrees centigrade. Pour the mixture into the springform pan so that it covers the crust. Stir in a cup of fresh or frozen blueberries. Bake for 40 minutes, then leaving the cheesecake inside the oven switch off the oven and leave the door slightly open for another 40 minutes. Remove from the oven and allow to cool completely. Serve with freshly brewed tea or a cup of raw milk.
Apple & Blueberry Oat crumble
This simple no fuss crustless crumble is quick and easy to prepare and delicious served with custard or cream as a dessert. Preheat the oven to 180 degrees centigrade. Blend together 125g butter, 1 tablespoon of Azeez whole cane sugar, 1 teaspoon ground cinnamon, 250ml flour and 150ml oats. The mixture should resemble slightly sticky crumbs.
In a pie dish, add 1 cup fresh or frozen blueberries to 4 sliced and cored green organic apples. Sprinkle over ½ teaspoon on cinnamon. Taking the pastry crumble over the fruit and then press down gently. Place the pie in the oven and bake for 20-30 minutes until golden brown on top. Serve warm or cold.
