5 Delicious Goji Berry Breakfasts

Goji berries make the ideal addition to almost any breakfast. Their mild taste and complex nutritional value can give you the perfect boost and energy to start your day. Here are five simple and easy ways to boost your breakfasts with Goji berries:

 

Goji quinoa

 

This quick and easy breakfast porridge takes just 15 minutes to prepare and is one of the best starts you can make to your day. Quinoa is a nutrition rich food on its own, add some goji berries and you can have a super food breakfast. When cooking the quinoa add a teaspoonful of dried goji berries. They will absorb water along with the quinoa as it cooks and add a slightly sweet sour flavor to the meal. This can be balanced with a spoonful of honey or natural yoghurt.

 

Goji breakfast smoothie

 

Smoothies are often a great way to get in a combination of nutrients without having to go to too much effort. Plus they can be enjoyed on the go or as an in between snack – a much healthier alternative to fast food. This smoothie recipe can be adapted to taste and preferences. Add together some organic spinach, an apple, a teaspoonful of goji berries, half a cup of natural yoghurt, half a cup of Natureland beetroot juice, two spoons of oats and some frozen or fresh berries of your choice. Combine together in an electric blender and enjoy.

 

 

Goji berry blinis

 

This is a fun breakfast to make for the family and is a hit with children. It takes a little longer but is perfect to enjoy together on a day when you are not working. Combine two eggs, a tablespoon of psyllium husk, a sprinkle of cinnamon and a teaspoon of goji berries. Allow to stand for 5 minutes. Heat some coconut oil in a pan on medium heat. Drop spoonfuls of the mixture into the pan to form individual blinis. Once they start to bubble flip them over so that they cook on both sides. Once cooked, serve with plain yoghurt for a delicious breakfast. You can also drizzle over a little honey for a sweeter taste.  

 

Goji berry seed muesli

 

This simple grain free muesli can be prepared in bulk and stored in an airtight glass container and enjoyed as desired. Mix together pumpkin seeds, black sesame seeds, chia seeds, flaxseed, goji berries and dried coconut flakes. To enjoy for breakfast, mix together with milk or yoghurt and allow to stand for 5 minutes so that the flaxseeds and goji berries expand and absorb some liquid, then enjoy for breakfast.

 

Goji berry breakfast bars

 

Perfect for when you are travelling or in a rush and need to eat something nutritious. These easy to make breakfast bars can be made in advance when you have more time and stored in an airtight container in the refrigerator. Mix together 100g coconut oil, 50g ground flaxseed 50g chopped dates, 30g dried goji berries, 1 tblsp coco powder, 30g pumpkin seeds. Mix all the ingredients together and press into a baking sheet. Place into the refrigerator to set then cut into squares and wrap in greaseproof paper. Store in the refrigerator.
