5 Quick Pasta Salad Recipes

Most of the time creating healthier food is associated with a lot of effort. Not this time. In this blog article we will share how you can combine Natureland whole grain pastas with a variety of Natureland ready made sauces. Sundried Tomato Pasta Salad

This salad can be made with leftover pasta and is best made with fusilli. The salad can be made the day before and stored in the fridge for best results as the sauce then has an opportunity to draw into the pasta. If you prefer a spicier taste you can add more curry powder. This recipe is for a milder flavour that can be enjoyed by the whole family.
 
You will need:            3 tblsp Natureland Sundried Tomatoes
                                2 tblsp Natureland ketchup
                                2 tblsp Natureland Balsalmic vinegar
                                2 tablsp Natureland Olive oil
                                1 tsp Natureland curry powder
                                4 cups cooked Natureland wholegrain pasta fusilli
                                Salt & pepper to taste
 
Method:

            
Cook the pasta and allow to cool. In a bowl combine the ketchup, balsalmic vinegar, olive oil, curry powder, salt and pepper. Chop the sundried tomatoes and addtothe sauce. Stir the sauce into the pasta making sure that it is coated well. Cover and place in the fridge for at least 30 minutes before serving.

 
Quickest Pesto Pasta Salad

This is a variation of the popular Italian Capresse salad. If you have no time to put a meal together this is one of the quickest pasta salad recipes you will find. Even making the pasta, this recipe can be prepared in about 15 minutes and then served straight away.
 
You will need:            4 tablsp Natureland pesto
                                4 cups cooked Natureland wholegrain pasta (fusilli or penne)
                                1 cup baby roma tomatoes – cut into quarters
                                100g mozzarella cheese – cut into cubes
 
Method:             

Prepare pasta and allow to cool. Cut up the tomatoes and mozzarella cheese. Once the pasta has cooled, stir in the pesto so that the pasta is coated. Add the chopped tomatoes and mozzarella and serve.
 

Tangy Pasta Salad

This salad combines the tangy taste of pickled vegetables with the creamy taste of mayonnaise. It is the ideal accompaniment for a lunchtime meal such a grilled chicken or fish. It can be prepared in advance and kept in the refrigerator.
 
You will need:            3 tblsp Natureland mayonnaise
                                1 tsp Natureland mild mustard   
                                3 large pickles sliced
                                ½ medium red pepper sliced
                                75g Natureland gouda cheese chopped
                                2 medium picked onions chopped
                                4 cups cooked Natureland wholegrain pasta (fusilli or penne)
 
Method:             

Cook the pasta and allow to cool. Chop the pickles, pickled onions, red pepper and cheese. In a bowl mix together the mayonnaise and mustard. Coat the pasta in the sauce, add the other ingredients and mix well. Serve immediately or store in the refrigerator until ready to eat.
 
Summer Crisp Vegetable Pasta Salad

This is a deliciously crisp and refreshing salad, ideal for hot summer’s days. It can be served with grilled fish or chicken or roast lamb.
 
You will need:            3 raw carrots thinly sliced or chopped
                                4 raw zucchini thinly sliced or chopped
                                1 cup cooked sweetcorn off the cob
                                ½ cup Natureland French salad dressing
                                4 cups cooked Natureland wholegrain pasta fusilli
 
Method:             

Prepare the pasta and allow to cool. Chop the carrot and zucchini and remove  sweetcorn from the cob. Add the chopped vegetables to the pasta and then pour  over the salad dressing. Chill in the refrigerator for 30 minutes before serving.
 
Quick Artichoke Pasta Salad

Another quick and easy pasta salad that takes just minutes to prepare. It can be served as a starter or as an accompaniment to a main meal. It is also ideal for a quick lunchtime snack.

 

You will need:           ½ jar Natureland artichokes

                              50g grated parmesan cheese

                              2-3 tblsp olive oil

                              Salt and pepper to taste

                              4 cups cooked Natureland wholegrain penne

Method:              

Cook the pasta and allow to cool. Chop the artichokes into small pieces and stir into  the pasta. Add 2-3 tablespoons of olive oil and sprinkle over parmesan cheese. Add salt and pepper to taste.
