Chia seeds aren’t your average baking ingredient, but they are wonderfully versatile. Chia seeds can be used as an egg substitute and binding agent. Here are three unusual and easy to make baking recipes that you can try with chia seeds:

 

 

Lemon poppy seed loaf

 

This is an easy to make loaf that keeps well and can be enjoyed as a tea time treat or breakfast snack. It is made with wheat flour but can be adapted to be gluten free. The delicious taste comes from the lemon and poppy seeds and the chia seeds give it a nutritional boost.

 

You will need:          200ml Natureland cultured butter

                              4 eggs

                              250ml wheat flour

                              5ml bicarbonate of soda

                              Grated rind and juice of 1 large lemon

                              30ml poppy seeds

                              30 ml chia seeds

                              100ml Azeez sugar

 

Method:

Pre heat the oven to 180 degrees centigrade. Grease and line a loaf pan. In a bowl soften the butter and blend in the sugar. Add the beaten eggs one at a time and stir well. Add the flour, bicarbonate of soda and seeds to form a batter. Finally add the lemon zest and juice. Sir well and pour into the prepared loaf pan. Bake for 60 to 70 minutes until cooked through and golden brown on top. Remove from the oven and allow cooling in the pan for 10 minutes before turning out on a cooling rack.     

 

Cheesy Chia Bread

 

This delicious cheesy bread is perfect for enjoying with some soup or plain with some Natureland cultured butter. It is full of healthy fats and the chia seeds provide that final nutrition boost. The recipe makes a large loaf that can feed 6-8 people.

 

You will need:           500ml grated cheese

                              320ml chia seeds

                              1000ml ground almonds

                              250 kefir

                              125 to 160ml water

                              8 eggs

                              Salt and pepper to taste

 

Method:

Grease a loaf pan with coconut oil and line with some oiled greaseproof paper. Preheat the oven to 180 degrees centigrade. In a bowl, combine the eggs, water and kefir and mix well. Add the almond flour, chia seeds and cheese. Stir well to make sure all the ingredients are combined. Pour the batter into the loaf pan and bake for 30-40 minutes. Remove from oven and allow to cool before serving.

 

Chia Berry Jam Cookies

 

These are super healthy grain free cookies made with almond flour instead of wheat flour. But it is the berry chia filling that really makes them delicious. Make a big batch because your family are sure to love them.

 

You will need:         500ml ground almonds

                              100ml coconut oil

                              90 ml honey or maple syrup

                              1 egg

                              Pinch of salt

                              Vanilla

                              325ml berries

                              30ml chia seeds

 

Method:

Make the jam first by simmering the berries and 60ml honey together over low heat. Once there is some juice in the pot, add the chia seeds.  Allow to cook for 10 minutes stirring occasionally. Remove from the heat and allow to cool.  To make the cookies, the first step is to preheat the oven to 180 degrees centigrade. In a bowl mix together the egg, coconut oil, vanilla and the remaining 30ml honey. Add the almond flour a little at a time to make sure it blends well. A soft dough should form. Roll into balls and place on a greased baking sheet. Using your thumb, press each ball down so that there is a hollow in the middle. Spoon a little chia berry jam into the hollow being careful not to overfill. Bake for 10-15 minutes and allow to cool on the tray before moving them to a cooling rack. Store in an airtight container.
