3 Easy Vegetarian Pasta Sauces

Vegetarian pasta sauces are delicious and easy to make. They are an easy way to get in your daily servings of vegetables and fibre and are ideal for the whole family. Here are three of our favourites:
Porcini cream pasta sauce
Porcini’s are one of the most delicious tasting mushrooms. You can get them dried.
You will need: 100g dried porcini mushrooms
100g fresh white button mushrooms
2 cloves of garlic crushed
Oregano
Thyme
250ml cream
Salt & pepper to taste
500g Natureland wholegrain spaghetti pasta
Method:
Put the spaghetti on to cook in boiling water. In a separate bowl, rehydrate the dried porcinis in just enough water to cover them. Once they are soft, chop them up. Keep the porcini water aside. Chop the white button mushrooms and garlic. Saute in a pan with a tablespoon of olive oil. Once cooked add the porcini mushrooms, and a pinch each of oregano and thyme. Turn down the heat and add the cream. Allow to simmer until the sauce turns light brown. Add the porcini water, salt and pepper to taste. Drain the spaghetti and return to the still warm saucepan. Stir in the mushroom sauce and place the lid back on. Take off the direct heat and allow to stand for 5 minutes so that the sauce draws into the pasta. Serve with grated parmesan cheese and black pepper.
Traditional Arrabbiata pasta sauce
A spicy tomato based pasta sauce that is best served with penne from natureland. You can adjust the amount of chilli used according to your taste and tolerance of spicy food.
You will need: 1 medium onion, finely chopped,
2 garlic cloves, finely chopped
1-3 fresh or dried chillies according to your taste
2 tsbsp olive oil
600g fresh tomatoes, peeled, deseeded and finely chopped
6 fresh basil leaves coarsely chopped
400g Natureland whole grain penne
Method:
Cook the pasta until tender. Heat a pan, add the olive oil, onion, garlic and chilli and sauté. Add the tomatoes and allow to cook on medium heat until tomatoes are soft and blended with the other ingredients. Finally add the chopped basil and salt to taste. Add the sauce to the drained pasta and allow to stand for 2 minutes to let the flavours draw in. Serve hot.
Simply delicious Broccoli Pasta Sauce
This is an adaptation of a favourite recipe by well known Italian chef Antonio Carluccio. Because it doesn’t contain a heavy sauce, it is a refreshingly light pasta dish that can be enjoyed for lunch or even as a starter.
You will need: 500g fresh broccoli florets
2 garlic cloves finely chopped
1 small fresh chilli
100g fresh mini roma tomatoes
90ml olive oil
Parmesan cheese
500g Natureland whole grain pasta penne
Method:
Cook the pasta in boiling water until tender. While the pasta is cooking chop and prepare the other ingredients. Sauté the garlic, chopped chilli and broccoli in the olive oil. Halve the mini roma tomatoes and add to the broccoli. Turn the heat down low so that the tomatoes roast. Add salt and pepper to taste. Once the pasta is cooked, add the broccoli sauce to the pasta and mix together. Add some additional olive oil if desired. Serve warm with grated parmesan cheese on top.
